 1. Boil & Mash Veggies: Boil potatoes, cauliflower, peas. Mash and keep aside.

 1. Prepare Onions
Add thinly sliced onions to a bowl and separate the strands.
 2. Season the Onions
Add green chillies, coriander, salt, ajwain, red chilli powder, turmeric, coriander powder.
Mix well — the salt will release moisture.
 3. Add Besan + Rice Flour
Sprinkle besan and rice flour gradually.
Mix with hands; add a few teaspoons of water ONLY if needed.
(Batter should be thick and cling to onions.)
 4. Heat Oil
Heat oil on medium flame.
 5. Fry Pakode
Drop small portions of the onion mix into the hot oil.
Fry until golden brown and crispy on medium flame.
 6. Drain & Serve

 • Add chopped onions and sauté until golden.
 • Mix in ginger-garlic paste; sauté 1 minute.
 • Add tomato puree and cook until the oil  separates.
 • Add turmeric, Kashmiri chilli powder, and salt.

3. Add Capsicum + Masala
 • Add capsicum cubes; sauté 2–3 mins (keep them slightly crunchy).
 • Add 1–1.5 tbsp fresh kadai masala and mix well.

4. Add Paneer
 • Add paneer cubes and gently toss.
 • Add ½ cup water (adjust consistency).
 • Simmer 3–4 mins.

5. Finish
 • Add garam masala + kasuri methi.

1. Prepare the Kachori
	1.	Mix sooji, maida, salt, and soda. Add little water and knead into a stiff dough.
	2.	Cover and rest for 20–30 minutes.
	3.	Roll small balls and flatten slightly.
	4.	Deep fry on medium flame till puffed and crisp golden. Keep aside to cool.

2. Prepare the Filling
	1.	In a bowl, mix potatoes, chickpeas, moong sprouts, little salt, and chaat masala.
	2.	Keep chutneys, curd, and garnishes ready.

3. Assemble Raj Kachori
	1.	Take one fried kachori, gently crack open the top.
	2.	Fill with potato–chickpea–sprout mixture.
	3.	Add curd, tamarind chutney, green chutney.
	4.	Sprinkle chaat masala, cumin powder, red chili powder, and black salt.
	5.	Top with sev, pomegranate, papdi, and coriander leaves.

Blanch spinach for 1 minute in boiling water. Drain immediately and squeeze excess water.
Mash blanched spinach & boiled green peas together (don’t puree—keep texture).
 2. Make the kebab mixture
In a bowl, combine:
 • mashed spinach + peas
 • grated boiled potato
 • ginger, green chilies
 • spices (garam masala, chaat masala, cumin powder, salt)
 • roasted besan / breadcrumbs
Mix to form a soft dough.
 3. Add cashews
Add chopped cashews into the mixture for crunch.
Shape into small round kebabs and lightly flatten.
 4. Top with cashews
Press 1 whole cashew on top of each kebab for garnish (like the photo).
 5. Shallow fry
Heat a pan with little oil. Cook kebabs on medium heat, 2–3 mins each side, until golden and crispy.
 6. Serve
Serve hot with mint–coriander chutney and lemon wedges.

	1.	Soak chickpeas overnight. Drain completely.
	2.	Blend chickpeas with onion, garlic, coriander,  chilies, spices → coarse mixture.
	3.	Add baking soda. If mixture is loose, add flour.

 1. Preheat oven to 350°F (175°C). Grease and line a loaf tin.
 2. Mash bananas in a large bowl until smooth.
 3. Add wet ingredients – mix in oil, sugar, vanilla, and yogurt (or buttermilk substitute).

	•	Potatoes – 3 medium (boiled & mashed roughly)
	•	Green peas – ¼ cup (optional)
	•	Oil – 2 tbsp
	•	Cumin seeds – 1 tsp
	•	Ginger – 1 tsp (grated)
	•	Green chilies – 1–2 (finely chopped)
	•	Coriander powder – 1 tsp
	•	Cumin powder – ½ tsp
	•	Garam masala – ½ tsp
	•	Red chili powder – ½ tsp
	•	Amchur (dry mango powder) – ½ tsp
	•	Salt – to taste
	•	Fresh coriander – 2 tbsp (chopped)

✅ For Frying
	•	Oil – enough for deep frying

Steps for Making Samosa:-

	1.	Make Dough – Mix flour, salt, and oil; add water and knead a stiff dough. Rest 20 mins.
	2.	Prepare Filling – Sauté cumin, ginger, chilies; add boiled potatoes, peas, and spices. Mix and cool.

 • 1–2 tsp lemon juice
 • 1 tbsp oil or mustard oil
 • Salt to taste

Veggies (optional but traditional)
 • 1 medium onion – cut into square pieces
 • 1 small green/red/yellow capsicum – cut into square pieces

For Cooking
 • Oil or butter for grilling/pan cooking

	•	Chopped dry fruits – almonds, cashews, pistachios

	1.	Soak sabudana – Wash and soak sabudana in water for 30–40 minutes. Drain and keep aside.
	2.	Boil milk – In a heavy-bottom pan, bring milk to a boil. Simmer for 5–6 minutes.
	3.	Cook sabudana – Add soaked sabudana into milk. Stir continuously to avoid sticking.
	4.	Add flavor – Once sabudana turns translucent, add sugar, cardamom powder, and saffron (if using). Mix well.
	5.	Cook till thick – Simmer for 10–12 minutes till kheer thickens.
	6.	Garnish – Add chopped nuts and raisins. Mix and switch off the flame.
	7.	Serve – Enjoy hot or chilled as a fasting dessert.
