 2. When milk curdles, strain through muslin cloth.
 3. Rinse with cold water to remove sourness.
 4. Hang for 30โ€“40 minutes (chenna should be soft, not dry).

2. Knead & Shape
 1. Knead chenna till smooth (8โ€“10 minutes).
 2. Add cornflour, knead again.
 3. Make small marble-size balls (they will expand).

3. Cook Angoori
 1. Boil sugar, water & cardamom.
 2. Add balls, cover and cook on medium for 12โ€“15 minutes.
 3. Switch off heat, let them cool completely.
 4. Gently squeeze excess syrup.

4. Prepare Ras
 1. Boil milk till slightly thick.
 2. Add sugar, saffron & cardamom powder.
 3. Cool completely, then add nuts.

5. Assemble
 1. Add cooked angoori into chilled ras.
 2. Refrigerate for 4โ€“5 hours.

 6. Mix gently to form a soft dough (do not knead).

๐Ÿง Steps
 1. Prepare batter:
Mix besan, yogurt, water, sugar, salt, turmeric, and ginger-chilli paste into a smooth batter. Rest 10 minutes.
 2. Activate:
Just before steaming, mix in ENO and whisk quickly. Batter becomes light and bubbly.
 3. Steam:
Pour into a greased tin. Steam for 12โ€“15 minutes on medium flame. Check with toothpick.
 4. Make tempering:
Heat oil โ†’ add mustard seeds, sesame seeds, curry leaves, green chillies. Add sugar-lemon-water mixture. Let it heat once.
 5. Soak & serve:
Pour tempering evenly over hot dhokla. Cool slightly, cut into squares, garnish with coriander.

 โ€ข 4 cups mustard greens (sarson), chopped
 โ€ข 2 cups spinach (palak), chopped
 โ€ข 1 cup bathua (optional)
 โ€ข 1 medium onion, finely chopped
 โ€ข 2โ€“3 green chilies
 โ€ข 1-inch ginger
 โ€ข 6โ€“7 garlic cloves
 โ€ข 2 tbsp makki ka atta (cornmeal)
 โ€ข 2 tbsp ghee
 โ€ข Salt to taste
 โ€ข Water as needed

 โ€”โ€”For tempering (optional but recommended):
 โ€ข 1 tbsp ghee
 โ€ข 4โ€“5 garlic cloves, sliced
 โ€ข ยฝ tsp red chili powder

โ€“ Steps

1. Wash and chop sarson, palak (and bathua).

2. Boil greens with ginger, garlic, green chilies & little water until soft.

3. Cool slightly and grind coarsely.

4. Heat ghee, sautรฉ chopped onion till golden.Add saag, salt & makki ka atta.

5. Cook on low flame for 25โ€“30 minutes, stirring occasionally.

6. Heat ghee, fry garlic till golden, add red chili powder.

7. Pour tempering over saag and mix well.

8. Serve hot with makki ki roti, butter & onions.
