Classic bakery-style Nankhatai recipe Ingredient Classic bakery-style Nankhatai recipe Ingredients—- • All-purpose flour (Maida) – ½ cup • Gram flour (Besan) – ½ cup • Semolina (Sooji/Rava) – 2 tbsp • Powdered sugar – ½ cup • Ghee – ½ cup (semi-solid) • Baking soda – ¼ tsp • Cardamom powder – ½ tsp • Chopped pistachios & almonds – 2 tbsp (for topping) • Milk – 1–2 tsp (only if needed) —————- Steps —- 1. Preheat oven to 170°C (340°F) for 10 minutes. 2. In a bowl, cream ghee and powdered sugar until light and fluffy. 3. Add cardamom powder and mix. 4. In another bowl, mix maida, besan, sooji & baking soda. 5. Add dry ingredients to the ghee mixture. 6. Mix gently to form a soft dough (do not knead). • Add a few drops of milk only if the dough feels dry. 7. Make small balls, slightly flatten them. 8. Place on a lined baking tray, leaving space between cookies. 9. Add nuts on top, press lightly. 10. Bake for 14–16 minutes until the bottom turns light golden. 11. In a bowl, mix besan, onions, chilies, turmeric, chili powder, ajwain, salt. 2. Add little water to make a thick batter. 3. Heat oil and fry small spoonfuls until golden and crisp. 4. Set aside. Make Kadhi: 1. Whisk curd + besan + turmeric + red chili + salt + water until smooth. 2. Pour into a pot and cook on medium heat. 3. Keep stirring until it starts boiling to avoid curdling. 4. Simmer 20–25 minutes until kadhi thickens. Prepare Tadka: 1. Heat oil/ghee, add mustard seeds, cumin, methi, red chilies. 2. Add ginger, garlic & curry leaves. 3. Pour this tadka into the kadhi. Boil milk on medium flame. 2. Lower heat and add lemon juice gradually. 3. When milk curdles, turn off heat. 4. Strain using a muslin cloth. 5. Rinse with cold water to remove sourness. 6. Hang for 20–25 minutes (chhena should be soft, not dry). 2️⃣ Knead Chhena 1. Transfer chhena to a plate. 2. Knead with palm for 8–10 minutes until smooth and soft. 3. Divide into small equal portions. 4. Roll gently into crack-free balls. 3️⃣ Prepare Sugar Syrup 1. In a wide pan, boil sugar + water. 2. Add cardamom. 3. Let it boil vigorously. 4️⃣ Cook Rasgullas 1.
