Falafel ✅ Ingredients • 1 cup dried chickpe Falafel 

✅ Ingredients
	•	1 cup dried chickpeas (soak overnight)
	•	1 small onion
	•	3–4 garlic cloves
	•	½ cup coriander (optional parsley)
	•	1–2 green chilies
	•	1 tsp cumin powder
	•	1 tsp coriander powder
	•	Salt + pepper to taste
	•	¼ tsp baking soda
	•	Flour 1–2 tbsp (chickpea flour or all purpose, only if needed)
	•	Oil for frying

🔥 Steps 

	1.	Soak chickpeas overnight. Drain completely.
	2.	Blend chickpeas with onion, garlic, coriander,  chilies, spices → coarse mixture.
	3.	Add baking soda. If mixture is loose, add flour.
	4.	Shape into balls.
	5.	Fry on medium heat until golden and crispy.

Serve with tahini/yogurt dip or hummus.

Ingredients
 • 3 ripe bananas (mashed)
 • ½ cup (120 ml) vegetable oil or melted butter
 • ¾ cup (150 g) sugar (brown or white)
 • 1 ½ cups (190 g) all-purpose flour
 • 1 tsp baking soda
 • ½ tsp baking powder
 • ½ tsp cinnamon (optional)
 • ¼ tsp salt
 • 1 tsp vanilla extract
 • ¼ cup (60 g) yogurt or ¼ cup (60 ml) milk + 1 tsp vinegar (buttermilk substitute)

Steps
 1. Preheat oven to 350°F (175°C). Grease and line a loaf tin.
 2. Mash bananas in a large bowl until smooth.
 3. Add wet ingredients – mix in oil, sugar, vanilla, and yogurt (or buttermilk substitute).
 4. Mix dry ingredients – sift flour, baking soda, baking powder, cinnamon, and salt.
 5. Fold gently – combine dry ingredients with wet mixture (don’t overmix).
 6. Pour batter into loaf tin. Optionally place a sliced banana on top.
 7. Bake for 45–55 minutes, until a toothpick inserted in the center comes out clean.
 8. Cool completely before slicing for neat pieces.

 • ¾ cup all-purpose flour (maida)
 • 2 tbsp cocoa powder
 • ½ cup powdered sugar
 • ½ tsp baking soda
 • ½ tsp baking powder
 • Pinch of salt

Wet Ingredients:
 • ¼ cup oil (sunflower or any neutral oil)
 • ½ cup water (room temperature)
 • 1 tsp vanilla extract
 • 1 tsp vinegar or lemon juice
 • 2 tbsp hot water (to bloom cocoa – optional but enhances chocolate flavor)

Optional: 2 tbsp chocolate chips

👩‍🍳 STEPS
 1. Preheat oven to 160°C (320°F). Grease mini loaf molds or a small loaf tin.
 2. In a bowl, sieve dry ingredients – flour, cocoa, baking soda, baking powder, salt, and sugar.
 3. In another bowl, mix oil + water + vanilla.
 4. Pour wet ingredients into dry ingredients.
Mix gently — do not overmix.
 5. Add vinegar/lemon juice and fold it in lightly.
(Batter becomes airy.)
 6. Pour batter into the mold. Add chocolate chips on top (optional).
 7. Bake:
 • Mini loaves: 12–15 mins
 • Small loaf: 20–25 mins
 8. Let it cool completely before slicing.

Ingredients:-

✅ For the Dough (Crust)
	•	All-purpose flour (maida) – 2 cups
	•	Oil or ghee – 3 tbsp
	•	Salt – ½ tsp
	•	Water – as needed (tight dough)

✅ For the Filling (Potato Masala)
	•	Potatoes – 3 medium (boiled & mashed roughly)
	•	Green peas – ¼ cup (optional)
	•	Oil – 2 tbsp
	•	Cumin seeds – 1 tsp
	•	Ginger – 1 tsp (grated)
	•	Green chilies – 1–2 (finely chopped)
	•	Coriander powder – 1 tsp
	•	Cumin powder – ½ tsp
	•	Garam masala – ½ tsp
	•	Red chili powder – ½ tsp
	•	Amchur (dry mango powder) – ½ tsp
	•	Salt – to taste
	•	Fresh coriander – 2 tbsp (chopped)

✅ For Frying
	•	Oil – enough for deep frying

Steps for Making Samosa:-

	1.	Make Dough – Mix flour, salt, and oil; add water and knead a stiff dough. Rest 20 mins.
	2.	Prepare Filling – Sauté cumin, ginger, chilies; add boiled potatoes, peas, and spices. Mix and cool.
	3.	Shape – Roll dough into ovals, cut in half, make cone, fill with stuffing, seal edges.
	4.	Fry – Fry on medium-low heat until golden and crispy.

For Marination
 • 200–250 g paneer cubes
 • ½ cup thick curd (hung curd or Greek yogurt)
 • 1 tbsp gram flour (besan) – optional but adds texture
 • 1 tsp ginger-garlic paste
 • 1 tsp red chili powder (adjust to taste)
 • ½ tsp turmeric powder
 • 1 tsp coriander powder
 • 1 tsp cumin powder
 • ½ tsp garam masala
 • ½–1 tsp chaat masala
 • 1 tsp kasuri methi (crushed)
 • 1–2 tsp lemon juice
 • 1 tbsp oil or mustard oil
 • Salt to taste

Veggies (optional but traditional)
 • 1 medium onion – cut into square pieces
 • 1 small green/red/yellow capsicum – cut into square pieces

For Cooking
 • Oil or butter for grilling/pan cooking

1. Cut paneer, onion, and capsicum into cubes.
 2. Mix marinade – curd, spices, lemon juice, oil, and besan.
 3. Add paneer & veggies and coat well. Rest 30 mins.
 4. Skewer (optional) – paneer and veggies alternately.
 5. Cook on tawa, oven, or air fryer until golden and slightly charred.
 6. Sprinkle chaat masala and serve with chutney and lemon.

🌸 Ingredients
	•	Sabudana (sago/tapioca pearls) – ½ cup
	•	Full cream milk – 4 cups
	•	Sugar – 4–5 tbsp (or as per taste)
	•	Cardamom powder – ½ tsp
	•	Saffron strands – a few (optional)
	•	Chopped dry fruits – almonds, cashews, pistachios
	•	Raisins – 1 tbsp

🌸 Steps
	1.	Soak sabudana – Wash and soak sabudana in water for 30–40 minutes. Drain and keep aside.
	2.	Boil milk – In a heavy-bottom pan, bring milk to a boil. Simmer for 5–6 minutes.
	3.	Cook sabudana – Add soaked sabudana into milk. Stir continuously to avoid sticking.
	4.	Add flavor – Once sabudana turns translucent, add sugar, cardamom powder, and saffron (if using). Mix well.
	5.	Cook till thick – Simmer for 10–12 minutes till kheer thickens.
	6.	Garnish – Add chopped nuts and raisins. Mix and switch off the flame.
	7.	Serve – Enjoy hot or chilled as a fasting dessert.

👉 Tip: Kheer thickens on cooling, so adjust milk consistency before serving.

	•	2 tbsp sev (fine gram flour noodles)
	•	2 tbsp chopped onion
	•	Extra chutneys (tamarind, garlic, mint)

📝 Steps:

Prepare stuffing:  Heat oil → add mashed potatoes → mix Dabeli masala, chutneys & salt → cook 2–3 mins → add peanuts, coriander & pomegranate.

Assemble pav: Slice pav → spread chutneys → stuff with filling → top with onion, sev & pomegranate.

Roast & serve: Butter the pav → roast till golden → serve hot with chutneys.
