* 1ยฝ cups all-purpose flour (maida)
* ยพ cup powdered sugar
* ยฝ cup milk
* ยผ cup oil (or melted butter)
* 1 tsp vanilla extract
* 1 tsp baking powder
* ยผ tsp baking soda
* 2 tbsp cocoa powder
* 2 tbsp milk

Instructions :โ€”โ€”

1. Preheat oven to 180ยฐC (350ยฐF) and grease a loaf pan.

2. Mix dry ingredients
  In a bowl, sift flour, baking powder, baking soda.

3. Prepare wet mixture
  In another bowl, whisk sugar, milk, oil, and vanilla until smooth.

4. Make batter
  Add wet ingredients to dry and mix gently to form a smooth batter. Do not overmix.

5. Divide batter into 2 equal parts.

6. Add cocoa powder + 2 tbsp milk to one portion and mix well.

7. Create marble effect
 * Pour alternating layers of plain and chocolate batter into the pan
 * Use a knife/skewer to gently swirl

8. Bake for 35โ€“40 minutes or until a toothpick comes out clean.

9. Let it cool for 10 minutes, then demold and cool completely before slicing.

 โ€ข 1 tsp red chili powder (adjust to taste)
 โ€ข ยฝ tsp turmeric powder
 โ€ข 1 tsp coriander powder
 โ€ข 1 tsp cumin powder
 โ€ข ยฝ tsp garam masala
 โ€ข ยฝโ€“1 tsp chaat masala
 โ€ข 1 tsp kasuri methi (crushed)
 โ€ข 1โ€“2 tsp lemon juice
 โ€ข 1 tbsp oil or mustard oil
 โ€ข Salt to taste

Veggies (optional but traditional)
 โ€ข 1 medium onion โ€“ cut into square pieces
 โ€ข 1 small green/red/yellow capsicum โ€“ cut into square pieces

For Cooking
 โ€ข Oil or butter for grilling/pan cooking

1. Cut paneer, onion, and capsicum into cubes.
 2. Mix marinade โ€“ curd, spices, lemon juice, oil, and besan.
 3. Add paneer & veggies and coat well. Rest 30 mins.
 4. Skewer (optional) โ€“ paneer and veggies alternately.
 5. Cook on tawa, oven, or air fryer until golden and slightly charred.
 6. Sprinkle chaat masala and serve with chutney and lemon.

 โ€ข 10โ€“12 saffron strands
 โ€ข ยผ tsp cardamom powder

1. Make Chenna
 1. Boil milk, switch off heat, add lemon juice/vinegar.
 2. When milk curdles, strain through muslin cloth.
 3. Rinse with cold water to remove sourness.
 4. Hang for 30โ€“40 minutes (chenna should be soft, not dry).

2. Knead & Shape
 1. Knead chenna till smooth (8โ€“10 minutes).
 2. Add cornflour, knead again.
 3. Make small marble-size balls (they will expand).

3. Cook Angoori
 1. Boil sugar, water & cardamom.
 2. Add balls, cover and cook on medium for 12โ€“15 minutes.
 3. Switch off heat, let them cool completely.
 4. Gently squeeze excess syrup.

4. Prepare Ras
 1. Boil milk till slightly thick.
 2. Add sugar, saffron & cardamom powder.
 3. Cool completely, then add nuts.

5. Assemble
 1. Add cooked angoori into chilled ras.
 2. Refrigerate for 4โ€“5 hours.
 3. Garnish with pistachios

 1. Preheat oven to 170ยฐC (340ยฐF) for 10 minutes.
 2. In a bowl, cream ghee and powdered sugar until light and fluffy.
 3. Add cardamom powder and mix.
 4. In another bowl, mix maida, besan, sooji & baking soda.
 5. Add dry ingredients to the ghee mixture.
 6. Mix gently to form a soft dough (do not knead).
 โ€ข Add a few drops of milk only if the dough feels dry.
 7. Make small balls, slightly flatten them.
 8. Place on a lined baking tray, leaving space between cookies.
 9. Add nuts on top, press lightly.
 10. Bake for 14โ€“16 minutes until the bottom turns light golden.
 11. Cool completely โ€“ they will become perfectly crumbly.

For Tempering (Tadka):
 โ€ข 2 tbsp oil or ghee

 โ€ข 1โ€“2 dry red chilies
 โ€ข 8โ€“10 curry leaves
 โ€ข 1 tsp chopped ginger

Make Pakoras:
 1. In a bowl, mix besan, onions, chilies, turmeric, chili powder, ajwain, salt.
 2. Add little water to make a thick batter.
 3. Heat oil and fry small spoonfuls until golden and crisp.
 4. Set aside.

Make Kadhi:
 1. Whisk curd + besan + turmeric + red chili + salt + water until smooth.
 2. Pour into a pot and cook on medium heat.
 3. Keep stirring until it starts boiling to avoid curdling.
 4. Simmer 20โ€“25 minutes until kadhi thickens.

Prepare Tadka:
 1. Heat oil/ghee, add mustard seeds, cumin, methi, red chilies.
 2. Add ginger, garlic & curry leaves.
 3. Pour this tadka into the kadhi.

Combine:
 โ€ข Add pakoras into hot kadhi, simmer for 5 minutes, garnish with coriander.

Steps

1. Butter bread slices; spread green chutney inside.
 2. Layer sliced veggies on bread.
 3. Sprinkle salt, pepper & chaat masala.
 4. Add cheese (optional).
 5. Cover with another slice.
 6. Grill till golden & crisp.
 7. Cut and serve hot.
