Ingredients

For Chhena (Paneer):
 •  Full-fat milk – 1 liter
 •  Lemon juice or vinegar –2 tbsp (mixed with water)

For Sugar Syrup:
 • Sugar – 1 cup
 • Water – 4 cups
 • Green cardamom – 2 pods (optional)

Steps

1️⃣ Make Chhena
 1. Boil milk on medium flame.
 2. Lower heat and add lemon juice gradually.
 3. When milk curdles, turn off heat.
 4. Strain using a muslin cloth.
 5. Rinse with cold water to remove sourness.
 6. Hang for 20–25 minutes (chhena should be soft, not dry).

2️⃣ Knead Chhena
 1. Transfer chhena to a plate.
 2. Knead with palm for 8–10 minutes until smooth and soft.
 3. Divide into small equal portions.
 4. Roll gently into crack-free balls.

3️⃣ Prepare Sugar Syrup
 1. In a wide pan, boil sugar + water.
 2. Add cardamom.
 3. Let it boil vigorously.

4️⃣ Cook Rasgullas
 1. Drop chhena balls into boiling syrup.
 2. Cover and cook on high flame for 10–12 minutes.
 3. Stir gently once or twice.
 4. Rasgullas will double in size.

5️⃣ Rest & Serve
 1. Switch off heat.
 2. Let rasgullas rest in syrup for 30 minutes.
 3. Serve warm or chilled.

 • Chhena must be smooth and slightly moist
 • Always cook in thin sugar syrup

 • Few strands Saffron (optional)

Steps
 1. In a bowl, mix besan with water to make a smooth, flowing batter (no lumps).
 2. Heat ghee/oil in a pan on medium heat.
 3. Hold a perforated ladle (boondi jhara) over hot oil and pour batter to form small drops.
 4. Fry boondi till just cooked (do not make crispy). Remove and set aside.
 5. In another pan, boil sugar and water to make 1-string consistency syrup.
 6. Add cardamom and saffron to the syrup.
 7. Add fried boondi into hot syrup and mix gently.
 8. Cover and rest for 10 minutes so boondi absorbs syrup.
 9. Garnish with nuts and serve.

Steps:

1. Prepare Dough —— In a bowl, mix warm milk, sugar, and yeast. Let it sit for 5–10 minutes until frothy (skip waiting if using instant yeast).Add flour, milk powder, and salt. Mix well.Add butter and knead into a soft dough (10–12 mins until smooth and elastic).

2. First Proof —— Cover and let the dough rise in a warm place for 1–1.5 hours, until doubled in size.

 • 1.5 cups fresh methi (fenugreek) leaves, chopped
 • 1 cup fresh cream (malai or heavy cream)
 • 1 cup milk
 • 1 tbsp ghee or oil
 • 1 tsp cumin seeds
 • ½ tsp turmeric powder
 • ½ tsp garam masala
 • ½ tsp black pepper
 • 1 tsp sugar (optional but recommended)
 • Salt to taste

🥣 Steps

1. Blend onion, cashews, ginger-garlic, and green chilli into a smooth paste. Keep aside.

2. Heat 1 tbsp ghee/oil, lightly sauté chopped methi leaves for 2–3 mins until the raw smell disappears. Remove and set aside.

3. In the same pan, add cumin seeds.Add the onion-cashew paste and sauté until the mixture thickens and turns pale.

4. Mix in turmeric, black pepper, salt, and sugar.

5. Pour in milk and allow it to simmer. Add cream and mix gently to create a rich gravy.

6. Add peas and the sautéed methi back into the gravy. Simmer for 5–7 minutes until peas are soft and flavors combine.

7. Add garam masala, mix, and turn off heat.

8. Garnish with fresh cream or with fresh coriander
 
9. Serve hot with Chapati, Butter naan or Rice.

 1. Prepare Onions
Add thinly sliced onions to a bowl and separate the strands.
 2. Season the Onions
Add green chillies, coriander, salt, ajwain, red chilli powder, turmeric, coriander powder.
Mix well — the salt will release moisture.
 3. Add Besan + Rice Flour
Sprinkle besan and rice flour gradually.
Mix with hands; add a few teaspoons of water ONLY if needed.
(Batter should be thick and cling to onions.)
 4. Heat Oil
Heat oil on medium flame.

 • 1 tsp Kashmiri red chilli powder

 • 1 tsp garam masala
 • 1 tsp kasuri methi (crushed)
 • Salt to taste
 • Fresh coriander for garnish

 – Steps ————

1. Make Kadai Masala
 • Dry roast coriander seeds, cumin, black pepper, red chilies, and cardamom until fragrant.
 • Cool and grind into a coarse powder. Keep aside.

2. Prepare the Base
 • Heat oil + butter in a kadai.
 • Add chopped onions and sauté until golden.
 • Mix in ginger-garlic paste; sauté 1 minute.
 • Add tomato puree and cook until the oil  separates.
 • Add turmeric, Kashmiri chilli powder, and salt.

3. Add Capsicum + Masala
 • Add capsicum cubes; sauté 2–3 mins (keep them slightly crunchy).
 • Add 1–1.5 tbsp fresh kadai masala and mix well.

4. Add Paneer
 • Add paneer cubes and gently toss.
 • Add ½ cup water (adjust consistency).
 • Simmer 3–4 mins.

5. Finish
 • Add garam masala + kasuri methi.
 • Garnish with coriander.

Ingredients
 • 1¼ cup flour
 • 1 tsp baking powder
 • ¼ tsp baking soda
 • ½ cup sugar
 • ½ cup milk
 • ¼ cup oil/butter
 • ¼ cup yogurt
 • 1 tsp vanilla
 • ½ cup mixed dried fruits
 • ¼ cup mixed nuts
 • 2 tbsp orange juice/warm water (soak fruits)

✨ Steps
 1. Soak fruits in warm water/orange juice for 10–15 mins; drain & flour coat.
 2. Whisk sugar, oil, milk, yogurt & vanilla.
 3. Add flour, baking powder & soda; fold gently.
 4. Mix in fruits + nuts.
 5. Bake at 170°C for 35–45 mins.
 6. Cool completely & slice.

Ingredients
	•	1 cup white sesame seeds
	•	¾ cup jaggery (use soft jaggery)
	•	2–3 tbsp water
	•	1 tbsp ghee
	•	½ tsp cardamom powder (optional)

Steps 

 1.Roast sesame seeds for 2–3 mins and keep aside.

2.Melt jaggery with water and cook only till soft-ball stage. (when dropped in cold water, it forms a soft ball that bends, not breaks •Do NOT overcook — this is the key for a soft chikki.)
	
3.Turn off heat, mix sesame seeds + cardamom.

4.Spread on greased plate (keep it slightly thick).

5.Let it set 10–15 mins — soft & chewy chikki is ready.

 • 1 cup peanuts (roasted, skin removed)
 • ½ cup jaggery
 • 2 tbsp water

Quick Steps
 1. Roast peanuts and remove skin.
 2. Melt jaggery with 2 tbsp water on low flame (don’t overcook).
 3. When it just starts bubbling, turn off flame.
 4. Mix in 1 tbsp ghee.
 5. Add peanuts and combine well.
 6. Spread on a greased plate and lightly press.
 7. Cut warm, cool, and store.

– Ingredients

Serves 2 cups
 • 1 .5 cup water
 • 1 cup milk (adjust for stronger or lighter tea)
 • 2 tsp loose black tea (Assam tea works best)
 • 2–3 tsp sugar (optional, adjust to taste)
 Whole spices:
 • 2 green cardamom pods
 • 3–4 black peppercorns
 • 1 small cinnamon stick
 • 1–2 cloves
 • A small piece of ginger (½ inch, crushed)

- Steps
 1. Lightly crush cardamom, pepper, cloves, and ginger to release flavor.
 2. Add water + crushed spices + cinnamon to a saucepan.Boil for 2–3 minutes until fragrant.
 3. Add 2 tsp loose tea.Boil for 1 minute.
 4. Pour in 1 cup milk. Add sugar.
Let the chai boil on medium and rise 1–2 times for deeper color & flavour.
 5. Lower the heat and simmer for 1–2 minutes.
 6. Strain into cups and enjoy hot.

For the Kachori Shell
	•	Sooji (semolina) – 1 cup
	•	Maida (all-purpose flour) – 2 tbsp
	•	Baking soda – 1 pinch
	•	Salt – 1 pinch
	•	Oil – for frying

For the Filling
	•	Boiled potatoes – 2 medium (chopped)
	•	Boiled chickpeas – ½ cup
	•	Boiled moong sprouts – ½ cup
	•	Papdi (optional) – few crushed
	•	Pomegranate seeds – 2 tbsp
	•	Sev – ½ cup
	•	Coriander leaves – 2 tbsp (finely chopped)

For Garnishing
	•	Whisked fresh curd – 1 cup
	•	Tamarind chutney – 3–4 tbsp
	•	Green chutney – 2–3 tbsp
	•	Chaat masala – 1 tsp
	•	Roasted cumin powder – ½ tsp
	•	Red chili powder – ½ tsp
	•	Black salt – as per taste

👩‍🍳 Steps

1. Prepare the Kachori
	1.	Mix sooji, maida, salt, and soda. Add little water and knead into a stiff dough.
	2.	Cover and rest for 20–30 minutes.
	3.	Roll small balls and flatten slightly.
	4.	Deep fry on medium flame till puffed and crisp golden. Keep aside to cool.

2. Prepare the Filling
	1.	In a bowl, mix potatoes, chickpeas, moong sprouts, little salt, and chaat masala.
	2.	Keep chutneys, curd, and garnishes ready.

3. Assemble Raj Kachori
	1.	Take one fried kachori, gently crack open the top.
	2.	Fill with potato–chickpea–sprout mixture.
	3.	Add curd, tamarind chutney, green chutney.
	4.	Sprinkle chaat masala, cumin powder, red chili powder, and black salt.
	5.	Top with sev, pomegranate, papdi, and coriander leaves.

✨ Serve immediately before it gets soggy!
